Wash and peel apples. Dry with absorbent paper. Remove the core and dig.
Place inside a tsp of jam, a sprinkle of cinnamon.
Roll out the pastry and spread the unsweetened cocoa and some crumbled biscuits.
Put on the apple, dusted with honey, cocoa, cinnamon, a little sugar.
Close the apple with the pastry sealing it well around the cinnamon stick.
Brush with the yolk and bake at 180 degrees for 40 minutes.
Serve with vanilla ice cream (if you like).
